Homemade Blueberry Chia Seed Jam

I know what you are probably thinking. How any blueberry recipes can one person make in a single summer? Well…I’ve made a lot. Last week I shared my take on blueberry lemon crumb cake. And today, blueberry jam! The easiest jam you will ever make. Trust me — three main ingredients, stir it up and you’re almost there. Deciding what to serve this deliciousness on is [honestly] the hardest part. 

Ingredients for 10 servings:
2 pints fresh blueberries, washed and dried 
1 tbsp sweetener [brown sugar, honey, maple syrup or coconut sugar]
2 tbsp chia seeds 
Vanilla or almond extract, optional
Lemon juice, optional 
Additional sweetener, optional 

Directions:

  1. In a non stick pot, place blueberries and sweetener over medium heat and gently mash to burst some of the fruit
  2. Once the blueberry mixture has begun to bubble, add chia seeds and very stir well to incorporate
  3. Keep stirring until the mixture is thick, keeping in mind it will continue to thicken as it sits
  4. Set aside and let cool
  5. Place in refrigerator until you are ready to serve
  6. Stir again just prior to serving

If you’re following along on Instagram [and I hope you are!] you may have seen this dish in action.  I served this jam on sweet buttermilk biscuits. Then mixed the leftovers into smoothies the next morning. It would be delicious stirred into oatmeal or spread on plain whole wheat toast. Pancakes! French toast! Thumbprint cookies!
