Fig and Walnut Roasted Brussels Sprouts

I have a s e r i o u s thing for brussels sprouts — they are so delish!  Am I right? Or am I right? So good! But so many people don’t make them at home because ‘they never come out the way they do in restaurants.’  Well, my friends…today they do!  And not because they are deep fried — although deep frying would definitely make them taste like they do in restaurants.

Ingredients for 2 servings:

1 pound brussels sprouts, halved and ends removed
2 tbsp olive oil
1/4 cup walnuts, roughly chopped
1/4 cup grapes, halved
1 tbsp fig jam
salt + pepper to taste


  1. Preheat oven to 425 degrees
  2. Place brussels sprouts in a large microwave safe bowl and fill with about 2 cups water
  3. Steam brussels sprouts about 2-3 minutes on high
  4. Drain well and toss brussels sprouts with olive oil and salt and pepper
  5. Place brussels sprouts in a heavy bottomed cast iron skillet, and roast about 30 minutes or until crispy
  6. After 3o minutes, check for doneness
  7. Toss walnuts with brussels sprouts, turn the oven’s broiler on high and broil for 2 minutes until the walnuts are just fragrant
  8. In a large bowl, combine roasted brussels sprouts and walnut with fig jam, gently toss with grapes
  9. Season to taste and serve immediately

This sweet and salty combination totally works here.  Just be sure you are seasoning the dish well enough so that it’s not overly sweet.  How do you usually cook brussels sprouts at home?  Roasted? Sauteed? GRILLED?! Please someone say grilled!
