Pomegranate Coconut Cocktail

Hello and happy new year! It feels like it’s been forever - I’ve missed you! Today I’m back, sharing a new favorite recipe for pomegranate coconut cocktails. This fizzy, light and refreshing drink is bright and festive [especially with Valentine’s Day coming up!] and was recently a party time favorite in our house. Remember my post on how to make a green smoothie? This cocktail features another low calorie coconut favorite, Bai5 Bubbles Waikiki Coconut which tastes like sparkling coconut water! Yum.
I love mixing my own cocktails at home - and it’s especially fun when guests are coming over! Wine and beer are usually always hits, but I also like to serve a cocktail. Lately, it’s been cold in New York City, and whipping up this delicious tropical beverage temporarily transported me to the beach!
When I’m the bartender, I always like my base to be something sparkling and fizzy, so theB ai5 Bubbles Waikiki Coconut perfectly hit the spot. I then add a splash of tart flavor - in this case, pomegranate juice [which also happens to be packed with good-for-you antioxidants!]. I’m not someone who loves overly sweet drinks, so I’m usually serving extra lime wedges for a little more punch.
Ingredients for four servings:
12 ice cubes
4 oz Ipanepa Pomegranate
4 oz vodka
1 can Bai5 Bubbles Waikiki Coconut
1 lime, quartered
Directions:
- Place 3 ice cubes in each tumbler, followed by 1 oz pomegranate juice and 1 oz vodka
- Fill each glass with sparkling coconut water and stir to combine
- Place one lime wedge in each glass and serve immediately
