Peanut Butter Oatmeal Balls

I’m a snack carrier. You will rarely find my bag free from tasty and nutritious snacks. Fresh fruit, fiber bars, raw nuts and string cheese top my list. But what about something sweetly satisfying without the calories of a bakery treat? These no bake coconut cinnamon peanut butter oatmeal balls deliver just that. Similar to my energy bites, without the baking time, these are a delicious and healthy on-the-go snack or perfect afternoon re-fuel with a cup of coffee or tea.
Ingredients:
1 cup old fashioned rolled oats
1 tbsp cinnamon
1 tbsp unsweetened shredded coconut + more for coating
1 tbsp chia seeds
1/2 tsp salt
2 tbsp dark chocolate chips
1/3 - 1/2 cup peanut butter*
2 tbsp maple syrup
Directions:
- Combine dry ingredients in a large bowl
- Add peanut butter and maple syrup and stir until incorporated
- Scoop a tablespoon sized portion into your hands and roll into a ball
- Roll balls in coconut
- Place on a plate and refrigerate at least 30 minutes or overnight
*Depending on the brand of peanut butter you use, you may need more or less. Start with 1/3 cup and add more if you need. I used Peanut Butter And Co Smooth Operator which is so creamy and delicious. I was able to use only 1/3 cup, but the finished product still had a rich peanut flavor.
