Oatmeal Banana Cookies

Monday morning on the subway, I read all 450 Reddit comments about Sunday’s Homeland episode. I’m literally in a huge internet black hole of Homeland and Serial. But I don’t care! I am totally obsessed. Did I mention I am anxiously awaiting the summer when ORANGE comes back? But, la la la, you are probably not here to hear my pop culture obsessions. You’re here for the food! And thank you so much for that! Today I’m featuring my favorite oatmeal banana cookies. Not so dissimilar to these peanut butter oatmeal balls or these wholegrain energy bites, these oatmeal banana cookies are totally customizable and did I mention so easy?!
Ingredients:
3 large bananas, ripe
1 cup raw old-fashioned rolled oats
1 tsp vanilla
2 tsp cinnamon
1/2 tsp salt
1/4 cup dark chocolate chips
1/4 cup unsweetened dried cherries (or raisins/cranberries/dates/blueberries/whatever dried fruit you have or like)
Optional: walnuts or peanuts, chia or flax seeds,
Directions:
  1. Preheat oven to 350 degrees
  2. In a large bowl mash bananas, oats and vanilla together until very well incorporated
  3. Mix in cinnamon and salt then add chocolate and cherries, and any other mix-ins you’d like
  4. With an ice cream scoop, or a large spoon, scoop cookies onto a baking sheet lined with a silicone mat, parchment paper or aluminum foil
  5. Bake for 15 minutes or until the cookies are firm to the touch
  6. Serve warm or room temperature

While I do not follow a gluten-free or vegan lifestyle, these cookies happen to be both! And they are delicious when served alone or alongside an almond milk latte as I did this past weekend.
