How To Make Beet Hummus

Beet hummus! Beets are one of my favorite vegetables – hearty and rich and so easy to make.  I love beets raw, especially in this preparation for cold sesame beets.  But here, the beets are roasted for extra sweetness and tossed into a simple hummus recipe for the brightest hummus imaginable.  The longer you roast the beets, the easier they are to process, but if you’re short on time, wrap them in foil and quick burst at high eat should help soften them.

Ingredients:

2 medium beets, peeled and quartered
2 tbsp olive oil + more for roasting beets
1 cup chickpeas, rinsed
2 garlic cloves, smashed
1 tbsp tahini
2 tbsp lemon juice
salt to taste
water to thin

Directions:

  1. Preheat oven to 400 degrees
  2. Drizzle beets with olive oil and place on rimmed baking sheet, bake 30 minutes or until soft and cooked through
  3. In a blender or food processor, combine chickpeas, garlic, tahini and lemon, pulse until mixed
  4. Add hot beets and continue to process until smooth in texture, adding a few drops of water if the hummus is too thick
  5. Taste and season with salt
  6. Refrigerate and serve with crackers, on toast, or with fresh vegetables

I served this beet hummus on a Simple and Crisp apple chip.  The sweetness of the apple chip pairs nicely with the savory and sweet flavors of the hummus.  Spread over crackers, bread or with fresh vegetables, this is an easy appetizer to serve with cocktails.
