This recipe for macaroni and cheese is an updated version of a classic – with a few small tweaks. I made this recently when I was craving something warm and hearty – it totally hit the spot.  You could easily lighten this dish by using nonfat or almond milk, reduced fat cheese or leaving off the crumb topping.  There really are so many variations to a simple macaroni and cheese meal. I made this version of Dijon macaroni and cheese with Maille Old Style whole grain Dijon mustard which added a nice mustardy flavor to the dish. And I love the texture of the mustard seeds!

Ingredients for 6-8 servings:

1 pound rotini
2 cups reduced fat milk
1/3 cup flour
6 tbsp butter, divided
2 tsbp grainy mustard
6 oz cheddar cheese, shredded
2 oz parmesan cheese, shredded
1/4 tsp salt
20 saltine crackers, crushed

Directions:

  1. Cook pasta according to package instructions, drain and set aside
  2. Preheat oven to 375 degrees
  3. In a heavy bottomed pan, heat milk and 4 tbsp butter over medium low heat until the butter is melted
  4. Slowly add the flour, sprinkling it over the milk mixture, and whisking constantly until its thickened
  5. Add the mustard and stir to combine, then add the cheeses and salt, combine
  6. In a large bowl or in the pot you used to cook the pasta, stir together cheese sauce with pasta
  7. In a nonstick pan, melt remaining 2 tbsp butter and toast saltine cracker crumbs
  8. Grease a baking dish and pour pasta into the dish, smoothing the top with a rubber spatula
  9. Top the pasta with toasted saltine cracker crumbs and bake at least 30 minutes until the bake has set and the topping is golden brown and crunchy
  10. Enjoy immediately

You could definitely add some veggies – sautèed spinach, roasted mushrooms, peas, caramelized onions or roasted tomatoes. I think the spiral shape of this pasta holds the cheese sauce especially well, but use whatever you at at home! Anything will be delicious and who can resist a good mac and cheese every now and then?
