Cheddar and Chive Buttermilk Biscuits

Well well well. Biscuits. Long time no see, my friends. Just kidding, I just recently made biscuits to serve with my blueberry chia jam. But these biscuits. These are beyond. Little golden brown, savory, flaky and d e l i c i o u s jewels.

I used both Kerrygold butter and cheddar cheese for this recipe. Have you ever tried Kerrygold? OMG you must. Rich doesn’t ever do this butter justice. And the cheese…oh the cheese. So many choices, and each one better than the next.

You may remember this cheese plate? I paired their mild Swiss with salty and sweet bites. So good. But today is all about cheddar cheese. Aged cheddar cheese to be exact.

Ingredients for 15 servings
2 1/4C flour
1 tbsp baking powder
1 tsp sugar
1/2 tsp salt
3 oz cold salted butter, cubed
4 oz cheddar cheese, shredded
1/3C chopped chives
1C reduced fat buttermilk, plus more if needed

Directions:

  1. Preheat oven to 450 degrees
  2. Combine flour, baking powder, sugar and salt in a large bowl
  3. Cut butter into flour mixture using a fork, a pastry blender, or your clean hands, until well combined
  4. Add cheese and chives, mixing until incorporated, then add buttermilk and stir to combine
  5. Place a Silpat or similar non-stick sheet over a large rimmed baking sheet and scoop 9-12 biscuits, depending on the size of your baking sheet
  6. Bake for 15-20 minutes, or until golden brown and cooked
  7. Repeat with remaining dough
  8. Serve immediately: alone, with butter, or with a fried egg

The biscuits take on an amazing golden hue. At first it looks like the recipe used yellow cheese [GASP!] and thus, the finished product had this color. But no, no…just the heavenly product of regular white cheese baking in an oven. I served these biscuits with a single fried egg, and a side of peppery green salad on these plates and these placemats.
