Toblerone Cookies

Happy Holidays and Happy Monday! In the spirit of the holiday season, I’m sharing my favorite recipe for chocolate candy cookies. These cookies are a play on these brown butter chocolate chip cookies (from deep in The Domesticated Wolf archives), and are sweet and gorgeous thanks to a single piece of decadent Toblerone placed in the center. They are simple to make, which is lucky, because they are gobbled up so fast your guests will be asking for seconds!

Ingredients for 12-24 cookies, depending on cookie scoop size (I used this Crate and Barrel ice cream scoop and made 12 cookies):
1 stick butter
1 cup flour
1 cup old-fashioned dry oats
1 cup granulated sugar
1 tbsp cinnamon
½ baking powder
½ tsp salt
1 tbsp vanilla
1 egg
1 tbsp milk
12 or 24 Toblerone pieces, depending on cookie scoop size (or any chocolate piece to your liking)

Directions:
1. Melt butter over low heat, stirring constantly until brown bits begin to form, then let cool
2. In a large bowl mix all dry ingredients
3. Once butter has cooled, whisk in egg, vanilla and milk
4. Incorporate wet ingredients into dry, place in refrigerator to cool
5. Preheat oven to 425 degrees
6. When oven comes to temperature, remove dough from fridge and scoop dough using a cookie scoop onto a parchment or silicone-lined cookie sheet, place one piece of chocolate into the center of each cookie, pressing gently
7. Bake for 12 minutes, let firm and cool slightly and enjoy immediately

Peanut butter cups, Hershey kisses, Cadbury fruit and nut (my mum’s fav!), Andes mints or your favorite chocolate would be perfect in this recipe. If you prefer a smaller cookie, this Crate and Barrel cookie dough scoop is the perfect size (just choose a smaller chocolate).

These cookies make a delicious option for cookies swap or homemade holiday gifts. I wrapped up a few for our neighbors, and they were a hit. Add a little gold ribbon and you are good to go!
