It’s October. Almost November [how, btw?!]. So what’s more timely than pumpkin? By now you probably know I really do love pumpkin — lately seen here and here. But really. These mini pumpkin cakes are so good. Even the #psl haters can get behind this one.

Crispy, soft, sweet, and cute: match made in dessert heaven.  Plus, I’ve gotten really into using silicone baking molds instead of traditional baking molds.  They are so easy to use, come in many fun shapes and sizes and are super non-stick.  I bought this one from a local New York baking supply company, but they are also available herehere and here.

Cake:
1-1/2 cup flour
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 cup pure pumpkin pureé
1/2 cup coconut oil, melted
2 eggs
1 cup granulated sugar
1/2 cup milk , optional

Glaze:
3/4 cup apple cider
2 tbsp granulated sugar
2 tbsp cinnamon

Directions:

  1. Preheat oven to 350 degrees
  2. Combine dry ingredients in a large bowl
  3. Whisk pumpkin, eggs, coconut oil and sugar together until combined
  4. Gradually combine wet and dry ingredients until incorporated
  5. If the batter is too dry, slowly add milk, 2 tbsp at a time, until the batter becomes thinner
  6. With an ice cream scoop, ladle one scoop of batter into the silicone molds
  7. Bake cakes at least 25-35 minutes, or until they are golden brown (baking time will depend on the size mold you are using)
  8. Allow the cakes to cool on a wire rack
  9. Heat apple cider over medium-low heat in a small sauce pan until thicker and reduced in volume by 1/2
  10. Combine cinnamon and sugar in a bowl
  11. Dip each cake top into the reduced apple cider, then into the cinnamon sugar and place on serving plate
  12. Enjoy immediately
