Coconut Cinnamon Granola

This recipe was enjoyed as part of my homemade greek yogurt bar at last weekend’s girls brunch. Yogurt bars are some of the easiest and most delicious ways to entertain. Because everyone has different tastes, a yogurt bar with lots of fixings is sure to please a crowd. This particular granola is seed and nut-free because I had a guest with a nut allergy. But it could easily be tailored to those who want to add extra protein and healthy fat to this delicious recipe!
Ingredients for 10 servings:
3 cups old fashioned rolled oats
1 egg white, beaten
1/2 cup packed brown sugar
1/2 cup maple syrup
1/2 cup melted coconut oil [or olive oil]
2 tbsp cinnamon
1 tsp salt
1/2 cup unsweetened coconut shavings
1/2 cup unsweetened dried cherries
1/2 cup unsweetened goji berries
1/2 cup unsweetened golden raisins
Directions:
- Preheat oven to 300 degrees
- Coat oats with egg whites
- Combine brown sugar, maple syrup, oil, cinnamon and salt, stir into oats mixture
- Cover a rimmed baking sheet with a silpat or parchment paper and place granola mixture on top
- Bake for 20 minutes, stirring granola every 10 minutes
- Add coconut shavings and bake another 20 minutes, continuing to stir granola every 10 minutes
- After 40 minutes, allow granola to cool then add dried fruit and toss to combine
- Enjoy over yogurt, with milk or on its own
