My husband, the sweets lover. Bless his heart, he just adores sweets. So after a really busy week, I wanted to treat him to something special last Saturday for weekend brunch. I thought about what ingredients I had in my pantry, and realized I had a huge amount of apples! And what better way to eat apples than in…apple biscuits. Shh, don’t tell your nutritionist! Just kidding, I totally support an occasional indulgence. After all, what’s life without indulgences and sweets?!

Do you remember this biscuit recipe? Well, these are a play on that savory deliciousness. Easy, quick and beyond tasty…these really can’t get any better!

Ingredients for 15 servings:

biscuits:

2 1/4C flour
1 tbsp baking powder
2 tbsp sugar
1/2 tsp salt
1 tsp cinnamon
3 oz cold salted butter, cubed
1C reduced fat buttermilk, plus more if needed

apples:

2-3 medium sized apples, peeled and chopped
1 tbsp butter
2 tbsp brown sugar, plus more for sprinkling
1/2 tsp cinnamon

Directions:

  1. Preheat oven to 450 degrees
  2. In a non-stick pan, combine apples, butter, brown sugar and cinnamon, cook over medium-low heat for 5 minutes or until the apples are tender and the sugar and butter are caramelized and thick, set aside to cool
  3. Combine flour, baking powder, sugar, salt and cinnamon in a large bowl
  4. Cut butter into flour mixture using a fork, a pastry blender, or your clean hands, until well combined
  5. Add buttermilk then cooked apples, mixing until incorporated
  6. Place a Silpat or similar non-stick sheet over a large rimmed baking sheet and scoop 9-12 biscuits, depending on the size of your baking sheet, sprinkle with brown sugar
  7. Bake for 15-20 minutes, or until golden brown and cooked
  8. Repeat with remaining dough
  9. Serve immediately: alone, with butter, or cream cheese

These really are best when served immediately. And they make your kitchen (and basically whole apartment if you live in New York City…) smell amazing. Perfect for guests, you can pop one batch into the oven right before they arrive, then the second batch once they’ve arrived. Doesn’t get much better than warm biscuits. Am I right, or am I right?
