Wholegrain Energy Bites


As a gal on the go, I often need a little pick-me-up throughout the day.  And because I work with so many pregnant mamas-to-be, I am always thinking up creative caffeine-free energy boosts.

{Although I should note: while I don’t think pregnant ladies need to abstain from caffeine all together, it is something that should be consumed in moderation.}

OK, back to our regularly scheduled program.  I baked these in mini cupcake tins similar to these.  Here’s how to make these little tasty bites.

1 -1/2 cup old fashioned rolled oats
3/4 cup whole wheat flour
1/2 cup packed dark brown sugar
1/2 cup coconut oil, melted
1 tsp vanilla extract
1 egg
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp kosher salt
2 tbsp unsweetened dried cherries
2 tbsp crushed pecans, toasted
2 tbsp unsweetened shredded coconut, toasted
  1. Preheat oven to 350 degrees
  2. Melt coconut oil and combine with brown sugar, set aside to cool in a large bowl
  3. Toast coconut and pecans in the oven, or on the stove over medium low heat, about 3-5 minutes
  4. Sift flour, baking soda, salt and cinnamon then combine with rolled oats
  5. Add egg and vanilla to cooled coconut oil and sugar mixture
  6. Slowly add dry ingredients to wet, and mix to combine
  7. Fold in dried cherries, toasted pecans and coconut
  8. Grease cupcake tin, fill 3/4 of the way full with batter and bake about 8-12 minutes or until a knife comes out clean
  9. Eat immediately, or pack for an on-the-go healthy treat









An added benefit?  These little ladies clock in at under 100 calories {94 calories to be exact!}
